SCOBY stands for “Symbiotic Culture of Bacteria and Yeast.” It’s a living, natural culture that starts the transformation of sweet tea into kombucha, creating the flavors and properties associated with traditional kombucha brewing.

How It Works

When you add SCOBY to sweet tea, it ferments, transforming sugars and creating a tea with an effervescent, tangy taste. With each brew, the SCOBY grows, making it ideal for future batches.

  • SCOBYs are best kept at room temperature in a sealed jar with some starter liquid. Avoid placing it in direct sunlight or in extreme temperatures. Never refrigerate or freeze your SCOBY, as this can damage the live cultures.

  • Since SCOBYs are live organisms, they are sensitive to temperature. We carefully package each SCOBY to keep it at a safe room temperature during shipping. We recommend that you bring the SCOBY indoors as soon as it arrives to avoid exposure to extreme cold or heat. Don’t refrigerate the SCOBY; it’s best stored in the room-temperature packaging until you’re ready to brew.

  • A typical kombucha brew takes about 7–10 days, depending on your taste preference and the temperature of your environment. Warmer rooms speed up the process, while cooler ones slow it down. Once your kombucha reaches the desired flavor, it’s ready to bottle and enjoy!

  • Absolutely! Your SCOBY is reusable and can be used to brew multiple batches of kombucha. With each batch, it will grow a new “baby” SCOBY on top. You can use the original or the new SCOBY for future brews, or share them with friends who want to start brewing their own kombucha! Just make sure to always keep your SCOBY in starter liquid and at room temperature between batches.
